Hank’s Oyster Bar Now Serving Custom Pasta in Old Town North

Alexandria VA – At a time when diners are searching for comfort, value, and creativity on the menu, Hank’s Oyster Bar is delivering all three with the launch of Hank’s Pasta Bar upstairs in its Old Town North location. The restaurant opened officially this evening with a ribbon cutting!

Known throughout the region for seafood favorites and neighborhood hospitality, restaurateur Jamie Leeds and Chef Darren Norris have transformed the second-floor dining room into a destination for pasta lovers with a customizable menu featuring imported single-source pasta and premium Italian ingredients.

The concept is simple but elevated: guests can mix and match seven different pasta varieties — including gluten-free options — with house-made sauces, proteins, vegetables, and toppings. Diners scan a QR code or request a printed menu to build their perfect plate.

Among the standout dishes is the Four Cheese Lasagna, which can be paired with sauces like rich meat Bolognese or a savory mushroom version suitable for vegetarians and vegans. Additional toppings such as Parmesan cheese and red pepper flakes allow guests to personalize every bite.

Chef-curated combinations are also available for diners seeking inspiration. One favorite is the Mafalde with Tuscan fennel sausage, broccoli rabe, garlic, Parmesan, and Calabrian chili. The fennel-forward sausage and slightly bitter broccoli rabe create a balanced and flavorful dish with just enough spice.

Another highlight is the Rigatoni Bolognese, available with either a traditional beef-and-pork sauce or a hearty mushroom-based alternative.

Beyond the food, Leeds continues her commitment to the community through a partnership with Real Food for Kids, supporting healthy meals and resources for local schools and families.

To celebrate the launch, the first 50 guests each evening from May 14–17 will receive a complimentary glass of prosecco or nonalcoholic sparkling wine.

With its relaxed upstairs dining room, thoughtful pricing, and endless pasta possibilities, Hank’s Pasta Bar is poised to become Old Town North’s newest comfort-food hotspot.
