The Cut Hosts Pig Butchery Presentation
In-store demo just one highlight of many this summer for the popular shop
Alexandria, VA – Customers of The Cut Butchery in Hollin Hall enjoyed a front-row seat for a pig breakdown recently.
Lead butcher Wendell Allsbrook, with the help of fellow butcher Jack Gladstone, broke down a whole hog in front of the enrapt crowd that gathered in the shop. The butchers explained each cut, discussed the techniques, and pointed out the different uses for each part of the pig along the way. ASking questions, customers learned quite a bit about the process.
Purveyor Long Stone Farm supplied the pig for the breakdown. If you’d like to see a similar demonstration, there will be another pig breakdown this Saturday, July 26, from 12 noon to 2 pm at The Cut Butchery, 7968 Fort Hunt Road in Alexandria.
The pig demos are just a couple of the great things happening these days at The Cut. The shop was recently named Best Butcher by DC Modern Luxury magazine, which featured a great online Q&A with Allsbrook. “We are honored and humbled by this award,” said owner Alex Kilroy. “We’re grateful to have Wendell on our team. His decades of experience and deep passion for the craft inspire all of us here every day.”
The shop recently hosted a wine and cheese tasting, and more events like that are in the planning stages, such as a Meet the Farmer series with The Cut’s purveyors. They have partnered with more local and small businesses also, and you can now buy delicious granola by The Granola Family, stationery by Carland Collections, and ice cream by Nightingale Ice Cream.
